We made this cake for my sister-in-law’s birthday – L had Emma pick the theme. I made thick buttercream frosting, just like for Emma’s birthday cake and molded it into shape. The mermaid frosting has more powdered sugar in it than the water. We put drops of food coloring directly onto the cake to create more texture in the waves and on the mermaid’s tail. The shells are well-washed sea shells from Gramma’s collection.
Emma and Johnny conducted many taste tests. Johnny’s hand isn’t hurt; he just wanted a band-aid. Can you spot the green bear he carried throughout our trip? And look how tidy my children’s hair is in that dry Nevada air!

For making frosting, I just guessed this time around out of sheer laziness, but I’ve used this recipe in the past with great success:

I sometimes add almond extract instead of the vanilla for a slightly different flavor. And I make it thick enough to mold by adding extra powdered sugar until I get the consistency I need.
